grilled tuna with pepper sauce
serves 8

Sauce can be made up to two days in advance.
 
2T EVOO, plus more for brushing
1 small onion, chopped
2 yellow bell peppers, chopped
1 medium Yukon Gold potato, peeled, halved lengthwise, sliced crosswise paper thin
1 c water
salt
1T fresh lemon juice
fresh ground pepper

8 six oz tuna steaks, 1 inch thick
sage leaves for garnish
  1. Preheat grill or broiler.
  2. In a saucepan heat 2 T of EVOO. Add the onion and cook over low heat until softened but not brown, about 5 minutes. Add the yellow peppers, potatoes, water and a big pinch of salt.
    Cover and cook until tender, about 12 minutes. Transfer to a food processor and process until pureed. Scrape the puree into a bowl, add the lemon juice and season with salt and pepper.
  3. Brush the tuna with EVOO and season with salt and pepper. Grill about 2 minutes on each side. Spoon the sauce onto a warmed dinner plate and set the tuna on top. Garnish with sage leaves.
